Learn how to make homemade nomadic dairy products. On this special program you will have an opportunity to learn traditional ways of making homemade diary product (dried curds, ferment mare’s milk, cheeses, creams, and even yogurt based vodkas with nomadic women. Generally Mongols prefer to eat dairy products during the summer months and fatty meats in cold seasons. During your stay, you will visit nomadic families and have an opportunity to ride camels, horses and ox carts with local nomadic guides.
Day One - Learn making hailmag: From UB to herder Battogtoh, your journey will take 280 km.You will be there around 2 pm.You will be welcomed with lunch. After lunch, you will learn how to make hailmag with his wife Dulamsuren.To make hailmag, white butter is melted on the fireplace in a pot, added little flour and stirred well.10 minutes later, it should be simmered. Then, seperated yellow butter or shar tos is put in a special pot. Sugar is put into it to add taste. After cooled, it will become ready to serve. To make hailmag, it takes 30-60 minute. In the evening, you will have dinner with famly.
Day Two - Learn making byaslag- cheese and eezgii – hardened milk: After breakfast, you will start learning. Having heated milk in a pot, one adds sour butter or youghur so that milk turns into thick curd and liquid. Sour butter of milk that is turned into thick curd is boiled untill it evaporates all water and liquid so that the thick chunks of curds are roasted. After cooling it little bit, one puts on the plank. It is dried in sunlight on the Ger. Generally, to make a hardened milk, it takes 1-2 hour. You will go to Bum-Ayaush`s home with Byambatogtoh by horse or camel The Bumayaush`s will welcome you lunch and hot drinks. After lunch, you will learn making cheese. To make a cheese, milk is heated on the fireplace softly until it bolis over. Then sour milk or yoghurt is added to turn it into thick curds. Depending on quantity of milk, sour milk or yoghurt that turns into curds should be added properly. After it is turned into curd, it is seperated from sour milk. Then poured out into cotton bag and put outside between two plank for 10-12 hours. In the evening, have dinner with the family.
Day Three - Making white butter and yoghurt: After breakfast, you will learn making white butter by boiling milk. Boiling milk is stirred with a deeper until a thick layer of skin is formed. To make white butter, it takes one hour. After lunch, you will visit to Mr Otgonbayar by horse. You will learn making yoghurt with his wife. To make yoghurt, milk that boiled over must be cooled. Depending on milk , yoghurt that stored is added and stirred well. Then it is heated on the fireplace and poured out into pot. 10-12 hours later, yoghurt will become ready to serve. In the evening, you will have a dinner with the family.
Day Four - Learn making dried curds and stirring airag- fermented mare`s milk: After breakfast you will learn making dried curds.To make dried curds, around 10 litre yoghurt is boiled for 10-20 minute and poured out into other pot. It is cooled for 3-4 hours. Then poured out into proper bag to decant and sour curd is put by heavy thing for 10-12 hours. After that, it is sliced by thread thinly and put on the plank on the Ger.Also, sugar and fruit can be added.After lunch, you will go to Idertsogt by horse. At his home, you will learn ferment mare`s milk.Airag is often stirred in evening time and 5-8 ltre airag is always remained in a pot as a airag to ferment. On the remained airag,mare`s milk is added and stirred 3000-5000 times. Local people milk mare in every 2 hours from 8 am. After stirring airag, get the pole back an close the lid.To make fermented mare`s, it takes 24 hours. In the evening, have dinner with the family.
Day Five - Learn making distilled spirit: After breakfast, distilling you will produce vodka. To make distilled spirit, fermented yoghurt is put in a pot that is16-18 litre on the fireplace.Before making a fire, you will prepare the utinsils for distilling. Then fill the pot with water and continue making fire. As soon as water in pot is heated, change the water with cold one twice. After this process, get the distilled spirit. In on distilling, 1-5 litre vodka is produced. It takes 2-4 hours, at his home, you will be welcomed with farewell lunch. Then our car will pick you up. It will take you to UB.
